Corn souffle with telemea, kashkaval, kefir and yogurt

Ingredients
  • 2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 30 gr. dill, finely chopped
  • 200 gr. kashkaval + 50 gr. separately
  • 200 gr. telemea
  • 200 gr. yoghurt
  • 100 gr. sana
  • 400 gr. boiled and drained corn
  • 4 eggs
  • 100 gr. flour
  • 1 tbsp. salt
  • freshly ground pepper
Preparation
  • Grate the telemea and the kashkaval.
  • Keep the 50 gr. kashkaval for the end.
  • Preheat the oven to 180 degrees and butter a baking sheet.
  • Mix all the ingredients well and pour them into the pan.
  • Sprinkle with the remaining kashkaval and bake in a preheated oven at 190 degrees for 40 minutes.
  • Let stand for at least an hour before serving because the corn is very damp.

Salad with oatmeal, halloumi cheese and figs

Ingredients
  • 1 small lettuce
  • 1 cup oatmeal
  • 100 gr. cherry tomatoes
  • 1 carrot
  • 1 tbsp. sunflower seeds
  • 2 dried figs
  • mint leaves
  • 200 gr. halloumi cheese
  • 1 tbsp. butter
Marinade
  • 2 tbsp. Lime juice or lemon juice
  • 4 tbsp. olive oil
  • 1 clove garlic, finely chopped
  • 1 tbsp. honey
  • Salt, freshly ground pepper

Preparation
  • Prepare the oatmeal according to the instructions.
  • Wash and finely chop the lettuce and carrot.
  • Cut the cherry tomatoes and figs in half.
  • Roast the sunflower seeds.
  • In another bowl, prepare the marinade by mixing all the ingredi­ents until combined.
  • Place the chopped lettuce, oatmeal, carrot, cherry tomatoes and figs on a deep plate and mix with the marinade.
  • Fry the halloumi cheese in butter, place it on the salad and garnish with the sunflower seeds.
